A great way of processing small batches of tomatoes is to  preserve them as peeled tomatoes.  I process most of my surplus tomatoes this way.  It sounds like a lot of work but it is actually much simpler than it appears.  I can process several kilos of tomatoes in quite a short space of time.  Once you get the hang of it it is very easy to do.
